SPRINGFIELD — A visit to Puerto Rico means a visit to one of the many chinchorros, food stalls often found in neighborhoods or near the beach. They are inspirations for what Eric Maldonado wants to do with a new restaurant opening on State Street.
“When you come here, you’re in Puerto Rico,” managing partner Maldonado said, gesturing to the front door of Boricua Bites, which is “We want someone to greet you the way they do in Puerto Rico.”
